Each Christmas growing up, my mother and I would make a similar Christmas treats – Peanut Butter Balls and Pecan Butter Balls otherwise known as Snowballs, brittle, rich treats loaded up with walnuts and came in confectioners' sugar. They really pass by a ton of names from Mexico (as wedding treats) to Russia (where they're tea cakes) to Austria (search for Viennese sugar balls).
It's nothing unexpected that these treats were grown freely everywhere throughout the world, since they're so darn straightforward that anybody with a reserve of nuts, a stick of spread, and some additional time on their hands would most likely discover their way to this formula eventually.
I adored helping my mother make and heat these unique treats at Christmastime. Furthermore, presently, numerous years after the fact, I'm anticipating voyaging home for Christmas and making these Pecan Butter Balls with my mother.

Pecan Butter Balls aka Snowballs - A wonderful christmas cookies, they have always been my favorite selection on the christmas cookie plate, for as long as I can remember.
Ingredients
- 2 stick butter, softened
- 4 Tablespoons granulated sugar
- 2 cup all purpose flour
- 1 teaspoon pure vanilla extract
- 2 cup finely chopped toasted pecans (or coarsely ground)
- 1 cup powdered sugar for rolling
Instructions
- Cream sugar and butter in a large bowl, then add flour, vanilla and pecans.
- Cover with plastic wrap and refrigerate for 30 minutes.
- Preheat oven to 350° F. Roll into small balls (about 1-inch across) and place on baking sheet.
- Bake for 12-15 minutes or until lightly browned.
- Let stand on cookie sheet about 2 minutes, then gently roll each one in powdered sugar. Let cookies cool. Once they cool, roll again in powdered sugar.
- Store loosely covered.
